Spiced Butternut Pumpkin and Chickpea Stew

This spiced butternut pumpkin and chickpea stew is a warming and hearty dish that’s perfect for a chilly autumn day. The butternut pumpkin provides a sweet and creamy base, while the chickpeas add protein and texture. The warming spices like cumin, paprika, cinnamon, and turmeric not only add flavour but also have anti-inflammatory properties, making this stew not only delicious but also healthy. Enjoy!

Ingredients:

  • 1 medium butternut pumpkin, peeled and diced
  • 1 can chickpeas, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper (optional)
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh coriander, chopped (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium-high heat. Add the onion and sauté for 2-3 minutes until softened.
  2. Add the garlic and sauté for another minute.
  3. Add the diced butternut pumpkin and chickpeas to the pot, and stir to combine.
  4. Add the cumin, paprika, cinnamon, turmeric, and cayenne pepper (if using) to the pot, and stir until the vegetables are coated in the spices.
  5. Pour in the vegetable broth, and stir to combine.
  6. Bring the stew to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the butternut pumpkin is tender.
  7. Season the stew with salt and pepper to taste.
  8. Serve the stew hot, garnished with fresh coriander if desired.
