Spiced Butternut Pumpkin and Chickpea Stew
This spiced butternut pumpkin and chickpea stew is a warming and hearty dish that’s perfect for a chilly autumn day. Ingredients:
- 1 medium butternut pumpkin, peeled and diced
- 1 can chickpeas, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp cinnamon
- 1 tsp turmeric
- 1/2 tsp cayenne pepper (optional)
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh coriander, chopped (optional)
Instructions:
- In a large pot, heat the olive oil over medium-high heat. Add the onion and sauté for 2-3 minutes until softened.
- Add the garlic and sauté for another minute.
- Add the diced butternut pumpkin and chickpeas to the pot, and stir to combine.
- Add the cumin, paprika, cinnamon, turmeric, and cayenne pepper (if using) to the pot, and stir until the vegetables are coated in the spices.
- Pour in the vegetable broth, and stir to combine.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the butternut pumpkin is tender.
- Season the stew with salt and pepper to taste.
- Serve the stew hot, garnished with fresh coriander if desired.
