Lentil and Ginger Pot

The combination of lentils, ginger, turmeric, and black pepper provides a powerful anti-inflammatory effect that may help support women’s hormonal balance. Lentils are also rich in fiber, which can help regulate blood sugar levels, while carrots and celery provide additional vitamins and minerals to support overall health.

Ingredients:

  • 1 cup dried lentils, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 4 cups vegetable broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Fresh cilantro, chopped (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  2. Add the grated ginger, turmeric, black pepper, and salt. Cook for another minute until fragrant.
  3. Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add the chopped carrots and celery and continue to simmer for another 15 minutes, or until the lentils are tender.
  5. Stir in the lemon juice and chopped cilantro (if using).
  6. Serve hot and enjoy!
