I’m calling these last minute muffins, because on Monday morning when it was time for my son to pack his lunchbox, I realised that I hadn’t made any cupcakes for him and I didn’t have ham or anything for his sandwich. I had a look at what I could make and I threw these ingredients together and they worked. They are sort of cupcakes, sort of muffins, but most importantly they are healthy, easy and fit in the lunchbox.
When I throw things together, I don’t write down the ingredients or quantities until after I taste them and decide if it’s worth it. Which means these quantities are approximate but as close as I can get to the actual quantities. Feel free tweak to your tastes.
2-3 mashed bananas
1 egg beaten
1/4 cup coconut flour
1 scoop collagen (optional, adds protein)
1 cup rolled oats
1 tsp vanilla extract
2-3 tbs honey
1 tsp baking powder
1 tsp cinnamon powder
Add all the ingredients in a bowl and mix until combined, scoop spoonfuls into muffin pans in muffin tin and bake in 170 degree oven for about 12-15 minutes or until golden brown and an inserted skewer comes out clean.
