  • 2 fresh fish fillets
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced

  • 1 red onion, sliced
  • 1 tablespoon balsamic vinegar
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 200°C and line a baking sheet with parchment paper.
  2. Place the fish fillets on the prepared baking sheet. Drizzle them with olive oil and sprinkle minced garlic, dried thyme, salt, and pepper evenly over the top.
  3. In a separate bowl, toss the chopped winter vegetables and sliced red onion with olive oil, balsamic vinegar, salt, and pepper.
  4. Spread the vegetable mixture around the fish fillets on the baking sheet.
  5. Bake in the preheated oven for about 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
  6. Once done, remove from the oven and garnish with fresh parsley.
  7. Serve hot and enjoy the delightful flavours of the fish and roasted winter vegetables.
