Packed with an array of wholesome ingredients, this detox soup is carefully crafted to cleanse your body and provide essential nutrients, leaving you feeling revitalized and ready to take on the day. I don’t only eat this when I’m doing a detox, it’s too yummy, not to have more often. So, grab your apron and let’s dive into the recipe.
- 1.5 Litres of Vegetable stock or bone broth
- 1 onion or leek, diced
- 2 cups broccoli, chopped
- 2 large carrots, chopped
- 1 red capsicum, diced
- 2 cups kale, chopped
- 3 stalks of celery, chopped
- 400g tin diced tomatoes
- 4 cloves garlic minced
- 1 tbs Italian dried mixed herbs
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1/2 tsp salt
In a large saucepan, heat 1 tbs olive oil and onion and garlic, sauté 2-3 minutes until soft and add celery, carrots, broccoli, and capsicum. Stir and cook for about 5 minutes until slightly cooked. Add tin tomatoes and seasonings and stir through. Add the stock or broth, and bring it to a boil, simmer at medium until the vegetables are cooked through. Add the kale and stir through cooking for another few minutes.
You can leave your soup chunky or use a stick blender.
This will make 4 well-sized servings.
