Fish Cakes
I like seafood, and this is a way that both my son and I can enjoy. Sometimes we have them on salad, in a noodle bowl, in a soup or as a burger.
400g boneless white fish (Australian and New Zealand is best)
1 tsp red chilli
2 tsp fish sauce
4 kaffir lime leaves
1/2 cup green beans
1/2 cup red capsicum
coconut oil for cooking
Honestly I just pop all the ingredients into the blender and pulse until they are combined and I can shape them into balls.
Heat the oil in a pan and flatten balls on to pan, flip once and cook through.
As I said there are many ways you can enjoy them. We like to make a fresh dipping sauce with
- 1/4 cup fresh lime juice
- 2-1/2 Tbs. sugar
- 2 Tbs. fish sauce
- 1-1/2 tsp. rice vinegar
- 1-1/2 tsp. coarsely chopped fresh cilantro
- 1 tsp. minced garlic
- 1/2 tsp. minced fresh hot red or green chilli
