Easy Pork Stir Fry

You know that I love quick and easy meals. They need to be dairy-free, low to no gluten, and red meat-free. That’s just what I like. This meal is quick and light, Let me know if you give it a go. 
500g pork mince
3 tbs soy sauce or tamari
2 tbs tapioca or cornflour 
500ml chicken stock or bone broth 
2 packs konjac noodles (or your choice of noodles)
1 tbs coconut oil 
1 tbs minced ginger
1 onion, sliced 
200g green beans
100g green peas 

In a glass mixing bowl combine pork, 1/2 the soy sauce and black pepper Leave for 10 to 30 minutes.

Combine stock or broth with soy sauce and flour in a jug  
Prepare noodles according to directions 
In a hot wok stirfry onion and ginger, when onion is soft add pork, stir fry for 2-3 minutes and add vegetables.    After 1-2 minutes add stock mixture, simmer while sauce thickens.  
Serve with herbs or chilli and a drizzle of sesame oil
