Sweet Potato Brownie

My son loves waiting until his friends have eaten a brownie and said it was delicious before he tells them it’s made from sweet potato. We often have this as an alternative to birthday cake, but we’ve also been known to have it for breakfast. Why not? It’s veggies right?

2 large sweet potato – diced and baked in the oven

1 tsp vanilla extract

1 tsp ground cinnamon

3 eggs – beaten

3 tbs sugar or honey

1 tsp baking powder

⅓ cup coconut oil runny

3 tbs coconut flour

1/2 cup cocao

Peel and dice the sweet potato coat lightly with coconut oil and place on lined baking tray in 180 degreee oven until cooked and tender. Place in food processor with vanilla, cinnamon, honey and baking powder. Best eggs and gently mix into cooled sweet potato mixture, fold through coconut flour and cocao until well combined.

Pour into lined and greased brownie tin

Bake in 170 degrees oven for 30 minutes or until a skewer comes out clean. let the brownie cool before slicing and serving.

I love this served with mixed berries!
