Gluten Free ‘Ginger spice’ cookies

1 cup flour – I like to use Teff flour or Tigernut flour for their flavour and nutrition, you could also use buckwheat flour

1 cup almond flour – or ground soaked almonds

1 tbs ground ginger

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp cardamom

1 tsp vanilla extract

1 tsp bi-carb soda

1 cup of rice malt syrup or runny honey

mix altogether in a bowl, roll into balls and then bake in 180 degree oven for 10 minutes, leave for a couple of minutes and then carefully move to cooling rack

For extra nutrition add some grass fed collagen to the mix before baking
