Any fruit muffins

I know we like muffins in our house, and we like making them together. It’s a great way to spend quality time with my son and also he licks the bowl instead of me.

I make this basic muffin batter and then split it into bowls and add whatever fruit my son wants. This recipe happened because he told me he wanted a banana muffin, a blueberry muffin and an apple muffin.

1 tbs coconut oil
1 cup Teff Flour (buckwheat flour or almond flour would also work)
1/2 cup rice flour
1/2 baking soda
1/2 cup brown sugar (can substitute for whichever sweetener you prefer)
3 tbs ground cinnamon
2 tsp vanilla extract
2 eggs
2 tbs almond milk (or whichever milk you prefer)
2 tsp apple cider vinegar

add 2 cups of your preferred fruit

Mix it all together and place in greased muffin tins
Bake in 160-180 degree oven for 15 minutes or until a skewer comes out clean
allow to cool and eat them up
