Lettuce Tortilla Tacos
Corn is one of those starchy foods that don’t sit well in my stomach, many years ago I stopped eating corn in my meals but I’ve been trying to convince my body that it’s totally OK with corn chips, popcorn and taco shells, because they’re yum and you can choose pretty healthy versions of them all.
Alas my body has not been convinced and so lettuce leaves have taken the place of taco shells, popcorn isn’t really a big loss and corn chips have been replaced by my delicious seeded crackers. If you haven’t made them, go to the recipe and give them a go.
I also want to point out that many of the taco seasonings in the supermarket have MSG, we all know the potential effects of MSG are dizziness, headache, heart arrhythmia, heart palpitations, irritability, migraine, nausea, neck pain, pins and needles in upper limbs, restlessness, rash, hives and bronchospasm in asthmatics. Ingredients:
500g mince (turkey, beef, chicken, pork)
1 avocado diced
1 tomato chopped
1 cup grated cheese
1/4 cup coriander chopped
1 carrot grated
2 iceberg lettuce leaves (whole) per person
please add any other salad you like eg cucumber, red onion, jalapeno, capsicum etc
spice mix
1 onion chopped
1 tbs ground cumin
1 tbs sweet paprika
2 tsp dried mixed herbs blend
2 tsp garlic granules
1/2 tsp salt
1/2 tsp dried chili flakes (optional)
2 tbs tomato paste
Heat 2 tbs of coconut or olive oil in a fry pan and add onion, saute until slightly brown, add spices and stir together. Add mince to the pan and cook through, finish with tomato paste. Make your tacos using a lettuce leaf as the shell and add your ingredients to your liking. You might like to add salsa, guacamole, relish or sour cream. Wrap the lettuce leaf up and enjoy. 🙂
