Lemon Turmeric Energy Balls
12 pitted medjool dates
1 cup gluten free rolled oats or steel cut oats use buckwheat or quinoa flakes if you can’t eat oats
½ cup activated almonds or cashews
4 tbs chia seeds
Juice of 1 lemon (I use about 2 because I love lemon)
Zest of 1 lemon
1 tsp vanilla extract
2 tsp turmeric ground
½ cup shredded coconut for dusting (mix with crushed pistachio for extra yum)
2 scoops of grass fed collagen
Blitz together
Roll into balls
Dust with coconut and pistachio if your using them
