Sweet Potato Nourish Bowl with Turmeric Chickpeas & Greens

Serves 1

Ingredients

  • 1 small sweet potato (200g), cubed
  • 1 tbsp olive oil
  • ½ tsp turmeric powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ cup cooked chickpeas (or canned, rinsed)
  • 1 cup broccolini, lightly steamed
  • 1 cup spinach or rocket
  • ¼ avocado, sliced
  • 1 tbsp hemp seeds or pepitas
  • Sea salt & pepper

Dressing:

  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • 1–2 tbsp warm water (to thin)

Method

  1. Preheat oven to 200°C. Toss sweet potato in half the olive oil, turmeric, cumin, and paprika. Roast 25 mins.
  2. In a small pan, heat remaining olive oil and cook chickpeas with a pinch of salt until slightly crispy.
  3. Arrange spinach, sweet potato, broccolini, chickpeas, and avocado in a bowl. Sprinkle with hemp seeds.
  4. Whisk dressing and drizzle over.
