Chicken and Mango Salad
This is a summery salad, with fresh mango available, however you could use tinned mango if you want to enjoy this beauty out of mango season. You can play around a little with the ingredients and dressing here, but I’ve never gone wrong with this one. 😉
Protein foods contain amino acids that stimulate the brain and are great for clear thinking. Chicken, nuts, and oils are all great for healthy brain tissue and mental alertness. I haven’t put exact measurements here because it’s a salad.
- Baby Spinach
- Cherry tomatoes
- Mango
- Spring or red onion
- kalamata or black olives
- walnuts
- olive oil
- chicken breast
- red wine vinegar
- sea salt
- black pepper
- fresh herbs like basil or parsley
Dressing: 2-3 tbs olive oil, 1-2 tbs red wine vinegar, salt and pepper, mix together well
Heat olive oil in the frypan and cook sliced chicken until tender.
Cut, slice, and chop other ingredients as needed and put everything into a salad bowl and toss through. Add sliced chilli if you like it. I do 😊
