Ingredients

  • 120g salmon fillet
  • Β½ cup cooked quinoa

  • 1 cup baby spinach

  • Sea salt & pepper

Dressing:

  • Juice & zest of Β½ orange
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 tbsp olive oil
  • 1 tbsp chopped dill

Method

  1. Roast beetroot with olive oil, salt, and pepper at 200Β°C for 25–30 mins.
  2. Pan-sear salmon until golden and just cooked.
  3. Whisk dressing ingredients until smooth.
  4. Toss quinoa, spinach, and beetroot with dressing. Top with salmon and pumpkin seeds.
