π Hormone-Nurturing Recipe: Sweet Potato Nourish Bowl with Turmeric Chickpeas & Greens (~950β1050 kcal per serve)

Ingredients
- 1 small sweet potato (200g), cubed
- 1 tbsp olive oil
- Β½ tsp turmeric powder
- Β½ tsp cumin
- Β½ tsp smoked paprika
- Β½ cup cooked chickpeas (or canned, rinsed)
- 1 cup broccolini, lightly steamed
- 1 cup spinach or rocket
- ΒΌ avocado, sliced
- 1 tbsp hemp seeds or pepitas
- Sea salt & pepper
Dressing:
- 1 tbsp tahini
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup
- 1β2 tbsp warm water (to thin)
Method
- Preheat oven to 200Β°C. Toss sweet potato in half the olive oil, turmeric, cumin, and paprika. Roast 25 mins.
- In a small pan, heat remaining olive oil and cook chickpeas with a pinch of salt until slightly crispy.
- Arrange spinach, sweet potato, broccolini, chickpeas, and avocado in a bowl. Sprinkle with hemp seeds.
- Whisk dressing and drizzle over.
