🌿 Keto-Biotic Recipe: Creamy Coconut Chicken & Greens

Ingredients
- 150g free-range chicken breast or thigh, sliced
- 1 tbsp coconut oil
- ½ small brown onion, diced
- 1 clove garlic, minced
- ½ tsp grated fresh ginger
- ½ cup coconut milk (full-fat)
- ½ tsp turmeric
- 1 tsp tamari (gluten-free soy sauce)
- 1 cup broccoli florets
- ½ cup green beans, trimmed
- ½ zucchini, sliced
- Juice of ¼ lime
- Fresh coriander to serve
- Sea salt & pepper
Method
- Heat coconut oil in a pan and sauté onion, garlic, and ginger for 2 mins.
- Add chicken and cook until golden.
- Pour in coconut milk, turmeric, and tamari. Simmer 5 mins.
- Add broccoli, green beans, and zucchini. Cook 3–4 mins until tender-crisp.
- Finish with lime juice and coriander.
