Vegetable and Chickpea burgers

I do like a burger but I don’t like red meat, these burger patties make a yummy vegetarian burger. You can use different beans or legumes and vegetables as you like. Kids and Adults alike seem to like them, and they go well with hummus and salad on a burger bun. We like to have ours with zucchini fries too. πŸ™‚

1 can chickpeas drained and rinsed ( I have also done this with kidney beans or butter beans)
1/2 cup grated vegetables (carrot, fennel, pumpkin, sweet potato)
2 eggs
1/2 cup breadcrumbs or hemp flour
season to taste

Mash the chickpeas or beans into a bowl until almost smooth, add vegetables and breadcrumbs or flour and add egg. Mix together to combine and shape into patties.

Cook in small amount of olive oil in fry pan until heated through.

Make a burger:
we used gluten free burger rolls and stacked them up with beetroot, tomato, onion, baby spinach, rocket and mayonnaise. Or with tomato relish, cheese and beetroot.
