Roast Chicken Salad with Pumpkin, Avocado & Tahini-Lime Dressing

Serves 1

Ingredients

  • 150g free-range chicken breast or thigh
  • 1 tbsp olive oil
  • 1 cup pumpkin, diced (about 150g)
  • ½ avocado, sliced
  • 2 cups rocket or mixed greens
  • ¼ small red onion, finely sliced
  • 1 tbsp pumpkin seeds (pepitas), toasted
  • Sea salt & pepper

Tahini-Lime Dressing

  • 1 tbsp tahini
  • Juice of ½ lime
  • 1 tsp honey or maple syrup
  • 1 tbsp water (more if needed to thin)
  • Pinch of sea salt

Method

  1. Preheat oven to 200°C. Toss pumpkin with half the olive oil, salt, and pepper. Roast 20–25 mins until tender.
  2. Season chicken and cook in a pan or oven until golden and cooked through. Slice.
  3. Whisk dressing ingredients until smooth.
  4. In a bowl, layer rocket, roast pumpkin, chicken, avocado, red onion, and pepitas. Drizzle over dressing.
