Keto-Biotic Recipe: Lemon-Garlic Salmon with Asparagus & Sauerkraut Salsa (~900 kcal per serve)

Ingredients
- 200g salmon fillet (skin on)
- 1 tbsp olive oil (for cooking)
- 1 tsp butter or ghee (optional if tolerated)
- Juice + zest of ½ lemon
- 1 clove garlic, minced
- 1 tbsp fresh dill or parsley, chopped
- 1 bunch asparagus, trimmed
- ½ cup cucumber, finely diced
- 2 tbsp sauerkraut (look for raw, unpasteurised)
- 1 tsp extra virgin olive oil (for the salsa)
- Sea salt & black pepper, to taste
Method
- Pat the salmon dry and season with salt, pepper, lemon zest, and garlic.
- Heat olive oil in a pan over medium heat. Add the salmon, skin-side down, and cook 4–5 mins until crisp. Flip and cook another 3–4 mins until just cooked through.
- Toss asparagus in the same pan for 2–3 mins until lightly charred.
- In a small bowl, mix cucumber, sauerkraut, dill, lemon juice, and a drizzle of olive oil for your probiotic-rich salsa.
- Plate the salmon with asparagus and spoon the salsa over the top.
