π Hormone-Nurturing Recipe: Roast Chicken Salad with Pumpkin, Avocado & Tahini-Lime Dressing (~1000 kcal per serve)
Serves 1
Ingredients
- 150g free-range chicken breast or thigh
- 1 tbsp olive oil
- 1 cup pumpkin, diced (about 150g)
- Β½ avocado, sliced
- 2 cups rocket or mixed greens
- ΒΌ small red onion, finely sliced
- 1 tbsp pumpkin seeds (pepitas), toasted
- Sea salt & pepper
Tahini-Lime Dressing
- 1 tbsp tahini
- Juice of Β½ lime
- 1 tsp honey or maple syrup
- 1 tbsp water (more if needed to thin)
- Pinch of sea salt
Method
- Preheat oven to 200Β°C. Toss pumpkin with half the olive oil, salt, and pepper. Roast 20β25 mins until tender.
- Season chicken and cook in a pan or oven until golden and cooked through. Slice.
- Whisk dressing ingredients until smooth.
- In a bowl, layer rocket, roast pumpkin, chicken, avocado, red onion, and pepitas. Drizzle over dressing.
