Quick and Healthy Fried Rice

  • 2-3 garlic cloves, crushed
  • 1-2 cm ginger grated
  • 1/2 cup green peas
  • 1/2 cup green beans
  • 1 cup broccoli
  • 2 cups cauliflower rice (see how below)
  • 1 tbs sesame oil
  • 1-2 tbs oyster sauce
  • 2 cups cooked rice
  • Chilli flakes, coriander to serve
  • protein – 3 large eggs / 250g diced chicken / 250g prawns / 250g bacon

Cook protein in pan with a little olive or coconut oil until cooked.
If using eggs, then beat eggs and cook omelette and remove from pan to slice.
Add vegetables and saute’ once tender add garlic and ginger, toss through, Move to side of pan, turn up the heat, add rice, one cup at a time, stir through, add sesame oil and oyster sauce and stir through.
Add omelette back to pan now
serve with chilli flakes and coriander

Cauliflower Rice
place 1 head of cauliflower in the food processor and pulse into fine pieces that look like rice. Melt 2 tbs coconut oil in a fry pan and cook cauliflower until softened. Season before serving.
