Sweet potato, apple and Teff Muffins

200g Sweet potato, peeled and diced

1 big green apple, diced

1 cup nut butter (almond, cashew, abc )

1 tsp cinnamon

1 tsp nutmeg

pinch of sea salt

3 free range eggs

1/3 cup sweetner (rice malt syrup, raw honey, maple syrup)

1/4 cup teff flour

2 tsp bicarb soda

preheat oven to 180 and line or grease muffin tray

steam sweet potato and apple until cooked

allow to cool slightly and blend in food processor

add the rest of the ingredients and mix until combined

pour into muffin tin and bake for approx 20 minutes
